Even though my Mom-in-law was Irish, she had South African tastes deeply ingrained when it came to food. She absolutely loved a good braai, klippies and coke and of course she made a mean Malva. Most of our friends don’t realize but my hubby is a very good cook in his own right. It really takes a special occasion or me being “on strike” for him to cook though. This last weekend, we had some friends over for a braai and my Mom-in-laws trusty recipe came out. Thanks Di xxx
The Cake part
Ingredients
2 cups flour
2 cups milk
2 Tablespoons apricot jam
2 eggs
2 cups sugar
2 teaspoons bicarb
2 teaspoons vinegar
pinch of salt
2 Tablespoons butter
Method
Preheat oven to 180ºC and grease two round cake tins.
Mix the flour, milk, apricot jam, eggs, sugar and bicarb together.
In a separate bowl, melt the butter and mix with the vinegar and salt.
Add all the ingredients together and mix well.
Pour into the two cake tins. Bake for approximately 40 mins or until a knife inserted comes out clean.
The Sauce
Ingredients
1 tin ideal milk
1 cup sugar
1 cup butter
Method
Melt ingredients together in a sauce pan stirring continuously.
Poke some small holes in the cake to aid the sauce’s absorption.
Pour the sauce over the cake.
Allow to sit for a 20 mins and occasionally spoon the sauce over the cake.
If the sauce starts going hard, place in a warm oven while the sauce is being absorbed.
Malva is amazing served with custard, cream or ice cream. Any extra sauce can be spooned over the cake on the plate. This cake is so sticky and oh so tasty. Enjoy!
