I am a huge fan of EASY recipes and my family loves Christmas mince pies. However, its Christmas time, life is busy and the last thing you feel like is slaving over a mixer and oven. This is the solution! The EASIEST mince pie recipe ever. I even do a “chocolate pie” for the kids, as they don’t like fruit mix.
Ingredients
1 roll of ready-made puff pastry
1 jar of fruit mince (For chocolate version, you will need your favourite chocolate)
1 egg for sticking pastry together
Flour for rolling
Brandy to taste
Methods
1. Sprinkle flour onto your rolling surface. Roll the puff pastry until its about 2mm thick.
2. Cut two sizes of circles into the pastry, a larger circle for the bottom and a smaller one for the top. You should be able to cut out about 12-18 circles of each size.
3. Grease a cupcake tin and place the larger circles in the bottom of the cup cake hollows.
4. Mix the fruit mince and brandy together, the amount of brandy is determined by your own preference. If you are making the chocolate version, then cut the chocolate into peices.
5. Place one table spoon of fruit mince or chocolate into the pastry cup.
6. Paint the smaller circles with egg and stick the smaller circle to the pastry cup so that it is sealed closed.
7. Using a fork, prick the top of the mince or chocolate pie.
8. Place in the oven at 200°C, until the pastry is crispy and brown.
Serve warm and enjoy.
